How to cook strawberry compote for the winter

For compote, ripe berries are selected, preferably of approximately the same size, the aesthetic moment is also important to us. In no case do you put overripe berries in compote, not only will they quickly “spread”, they can also cause fermentation, which we absolutely do not need.

It is also desirable to select clean berries so as not to wash them. Strawberries quickly absorb moisture when washed, and then quickly lose their shape in compote.

For blanks, we will need jars, usually I use a volume of three liters, most often all recipes are designed for this particular volume. The jars need to be washed with soda or dry mustard, in extreme cases, use laundry soap, but no dishwashing detergents, the smell from them remains for a long time and your compote will smell not like strawberries, but Fairy.

After washing, the jars will need to be held over steam or warmed up in the microwave. The lids must be boiled for five minutes. For compotes, choose those that are varnished so that they do not oxidize.

According to this recipe, close the compote very quickly. I use it more often than others because I don't like to mess around with sterilization.

How we will prepare compote:

We sort out the berries, I always choose the cleanest for compote so as not to wash it. But if yours is dusty, then you can put it in a colander and dip it a couple of times in a basin of water, then immediately spread it on a towel to remove the water.

For compotes, I always leave the largest berry and taste it to decide how much sugar to add. I also do this, for each jar I cook syrup separately, in principle it is not too tiring, but it is convenient to calculate the amount of water and sugar.

First, we put berries in a jar, I fill it by one third, some people like concentrated compote, well, in order to use fewer jars, they fill it in half or even more. Then, accordingly, you need to add more sugar.

I will describe the recipe for filling the jar by one third. When the berry is already covered, we boil water and pour boiling berries, a full jar, even a little over. We give three minutes to stand, wait until the berry releases juice into the water. Pour it back into the saucepan, add from 200 to 250 grams of sugar, depending on the sweetness of the berry, and boil for three minutes so that only the sugar dissolves.

Pour again, now ready-made syrup, into a jar, you need to fill it to the very edge so that there is no air in the jar. If necessary, you can add a little boiling water from the kettle. Immediately roll up the lids and put upside down under a fur coat for a day.

Strawberry compote for the winter with citric acid

To cook a delicious strawberry compote for the winter, you can add a lemon or lemon juice. Acid will guarantee that the drink will not go bad for a long time.

As in the first case, we prepare our ripe strawberries. We fill one-third of the banks. Immediately boil water and fill the jar to the very edges. We put a drain cap on the neck and pour it back to boil the syrup. We hold water in a jar for three minutes.

Pour a glass of sugar into a saucepan with water and boil the syrup, and pour a teaspoon of lemon into a jar. Pour everything with syrup, roll the lid and turn the jar under a fur coat for a day.

Compote of strawberries and apples for the winter

This, we can safely say, is a real classic of the genre. The sweet taste of the berry and its aroma is complemented by a slight sourness of apples. It turns out very tasty. I like to make such compote with Antonovka.

We will need:

  • Ripe strawberries
  • Apples of any kind
  • Sugar

How to make strawberry apple jam:

We sort and select the berry, if necessary, then wash it. Wash apples well and cut into slices. Peel or not, it all depends on taste, I leave the skin.

We fill the jar with berries, as always by one third. Usually three medium apples are enough for a three-liter jar. We won't post them right away. First, pour boiling water over the berries, hold for a couple of minutes and pour back into the pan.

Now we throw apple slices into this pan and pour three hundred grams of sugar. Cook for 8-10 minutes and pour everything into a jar of berries. Immediately roll up the lids and put under a blanket or a fur coat to cool.

Strawberry compote for the winter with mint

The drink is very refreshing. Real summer in a jar of strawberries along with mint.

We will need:

  • Sprigs of mint, you can take lemon balm

We prepare strawberries in the manner described above, put them in a jar, pour full boiling water and let stand for about three minutes. Drain the water back to add a glass of sugar and boil the syrup.

Here, too, everything is done simply, my berries and sorted. We fall asleep in a jar by a third, maybe by half. You can vary the ratio of berries to your liking. Pour boiling water for a couple of minutes, then cook syrup from it. If your jars are one-third full, then pour 200 grams of sugar, if half, then 250 grams. Fill the jars a second time with syrup and roll up as always.

Strawberry and raspberry compote

A very vitamin and tasty drink that will invigorate you in the cold winter and dull autumn. To prepare it, you need moderately ripe berries and a little citric acid, for sourness.

It is better to take berries in equal proportions so that there is a more balanced taste. We select the cleanest, you can’t wash raspberries for compote at all, otherwise the whole thing will fall apart. Frozen strawberry compote

Sometimes you want to cook fresh compote, but only a frozen berry is at hand. It is also great for making compote.

What you need:

  • 300 grams of frozen berries
  • 3/4 cup sugar
  • 2 liters of water

First, pour sugar into the water and bring to a boil, then pour the defrosted strawberries and cook for 20 minutes. You can drink compote both hot and chilled.

Fill the entire jar to the very top. It is convenient to do this using the same ladle. We cover the preservation with a clean tin lid.

We wait about 15 minutes, and pour the slightly cooled water into the same pan. It is convenient to pour boiling water using a dense plastic lid with holes and a spout.

Add sugar and citric acid to the drained water. Put on fire, bring to a boil, stirring so that the grains of sugar dissolve.

Re-fill the berries with syrup, and roll up the preservation. Let's check the tightness of the closure. Wrap until cool (it takes about a day). I'll put it in storage.

Strawberry compote with mint flavor

Strawberry compote for the winter with the addition of mint will perfectly replace store juices. The highlight of this recipe is the exquisite combination of strawberry and mint flavors in one glass.

Components for a 2 liter jar:

  • sugar - 200 g;
  • mint - a branch;
  • strawberries - 300 g;
  • water - 1.8 l;
  • citric acid - 2 g.

Cooking:

  1. The recipe indicates the weight of already peeled berries, they must be ripe, with a bright juicy color and elastic pulp. Ready compote should turn out not very concentrated, you can drink it without diluting it with water.
  2. To properly prepare the jars, wash them with soda and soak over steam for 5 minutes. We also wash the lids and boil for 10 seconds.
  3. We sort out the strawberries. We wash from pollution, we clean from sepals. Let's break it down into clean banks. Put a sprig of mint on top of each jar.
  4. Fill the berries with boiling water to the top, and cover with lids. Let stand for a quarter of an hour. Then we put a special lid into the hole on the jar, and pour the liquid into the prepared pan. We take mint out of the jars, and add sugar to the water to make the syrup.
  5. Boil water, preparing syrup, pour berries. We add a lemon to each jar, and roll up the lids.
  6. We wrap the jars with a warm blanket, this partly replaces the necessary pasteurization. When the jars have cooled, we remove them for storage in the pantry.

Strawberry compote for the winter with lemon

Recipe components are designed for a 3-liter jar. In addition to citric acid, a little lemon zest is added for smell.

Ingredients:

  • sugar - 1 tbsp.;
  • water - 2l.;
  • strawberries - 1 kg;
  • citric acid - 1 tsp;
  • lemon peel to taste.

Cooking:

  1. As always, first wash the berries and remove the sepals. Prepare the jars, and put a clean strawberry in them.
  2. Fill with boiling water to the top, cover with lids, and leave for 10 minutes.
  3. Drain the warm water from the strawberries into a saucepan, add sugar. Bring to a boil on the stove, adding lemon and zest.

For this blank, small sour apples are chosen (Antonovka can be used). Instead of apples, you can put blackcurrants, raspberries or gooseberries.

Ingredients:

  • apples - 300 g;
  • water - 2.5 l;
  • strawberries - 300 g;
  • sugar - 350 g.

Cooking:

  1. We will wash the strawberries and apples, clean them of everything superfluous. After removing the seeds from the apples, cut them into slices.
  2. We put it in clean three-liter jars, pour boiling water over it, and leave it for a quarter of an hour. Drain the water into a saucepan, boil with sugar.
  3. Again, fill the fruit mixture in the jar with syrup. We roll up the caps, turn over to check the quality of the capping, and wrap it with a blanket. When the jars have cooled down, put them away for storage.
Compote of strawberries and cherries with mint flavor for the winter

The components are indicated for 1 three-liter jar. The number of berries can be taken more or less than indicated in the recipe, the more there are, the richer the compote will be.

Ingredients:

  • sweet cherry - 300 g;
  • mint - 2 leaves;
  • sugar - 1.5 tbsp.;
  • strawberries - 300 g;
  • water - 2.5 l;
  • citric acid - 1 tsp. l.

Cooking:

  1. We choose red cherries so that the color of the compote is more saturated. It should be of good quality, without worms. We tear off the sepals from strawberries, tails from cherries. Dry the washed berries in a colander.
  2. Berries are laid out in clean prepared jars. At the bottom of each put two mint leaves. Pour boiling water for a quarter of an hour, covered with lids.

Strawberry-orange compote for the winter

Products are listed for 1 liter jar. You can make a blank without sterilization, as in the recipe, or pour berries with orange with sweet syrup and sterilize in water.

Ingredients:

  • strawberries - 350 g;
  • sugar - 100 g;
  • orange - 0.5 pcs.;
  • hot water - 600 ml.

Cooking:

  1. We tear off the tails of the washed strawberries. We dry the berries in a colander so that all excess water is glassed.
  2. Put the strawberries in the prepared jar.
  3. We clean the orange. If you simply cut it into circles along with the zest, the compote will be bitter. Therefore, we clean the peel and white film from orange slices. We put the pulp of the orange to the berries.
  4. Pour boiling water over strawberries. Cover with a lid and leave for a quarter of an hour.

  2. Wash and sterilize jars. Spread strawberries over them.
  3. Pour boiled, but not hot water. Drain into a saucepan, measure the volume.
  4. Measure out the right amount of sugar. Boil the syrup.
  5. Pour hot syrup over berries. Cover them with boiled metal lids.

Thinking about preparing compote, you also need to immediately determine how you will get the main ingredient. Strawberries are fashionable to buy on the market or pick in your own garden. We get rid of all the berries obtained from the stalks, fall asleep in a colander and rinse thoroughly in several waters. After that, leave the berries to dry on their own at room temperature.


Pour boiling water over a glass jar and rinse thoroughly with soda, rinse several times, then also dry it from moisture or simply wipe it with a dry towel. We fill the bottom of the glass container with washed strawberries as shown in the photo.
